Kale

Kale is a highly nutritious vegetable. It is an excellent source of vitamin C, iron, carotenes, manganes, vitamin B1, B2, B6, folic acid, calcium, and dietary fiber. It is extremely high in chlorophyll as well.

 

When selecting kale, choose greens that are dark green. Also make sure the leave are not wilted and avoid leaves that are turning yellow. Be sure to wash kale thoroughly, especially curly kale, as it can harbor insects and sand in the leaves.
