Tena's Green Energizing Soup
Equipment needed: knife, cutting board, blender
Ingredients:
2 cups of spinach (packed into the measuring cup)
1 carrot
1 cucumber
1 avocado
2 garlic cloves
1 red bell pepper
2 stalks of celery
¼ cup of pumpkin seeds
2 medium sized tomatoes
¼-1/2 cup of water
Handful of any type of fresh herb you would like. I used cilantro, you could vary with parsley, dill, etc, depending on your taste buds and preference
Optional: sea salt (or just add extra celery because it is a natural source of sodium), crushed red pepper flakes or cayenne pepper (cayenne pepper is especially good in the winter
because it helps to heat your body).
*Also in summer time, decrease cayenne pepper and increase celery and cucumber if you would like because they have a cooling effect on the body. In winter, increase cayenne if
your taste buds can handle it :-)
Directions: Coarsely chop all ingredients and place in blender. You don't have to spend too much time chopping, because you just want to get the blender moving. Blend until smooth. Depending on the
type of blender that you it can take have anywhere from 30 seconds to 2 minutes to blend to a smooth soup. Season to taste. Makes about 6 cups. Enjoy immediately or store in airtight container for no
more than two days.
