Almond Milk

Equipment needed:

Blender, cheesecloth or nut milk bag

 

Ingredients:

1 cup raw almonds (soaked at least 8 hours or overnight in refrigerator, use purified water only)

3 cups of purified water

1 tablespoon vanilla extract or 1 vanilla bean scraped

1/4 cup sweetener (maple syrup--although not raw, honey, or "raw" agave nectar, stevia drops are also an option but blend to taste as stevia is much much sweeter) If you have a powerful blender (such as VitaMix, you could also soak about 4 or 5 pitted dates and blend until smooth)

 

Directions:

Soak almonds at least 8 hours (or overnight in refrigerator). After soaking, discard soaking water and rinse almonds. Place rinsed almonds in blender with 3 cups of of purified water. Blend until smooth. Pour liquid into nutmilk bag or cheesecloth and  strain. Place milk mixture back into blender and add vanilla and natural sweetener. Blend to mix.

 

Makes 3 cups
