Almond (flavored) Coconut Date Cookies

Equipment needed: chopper or food processor( knife and cutting board is optional if you do not own a food processor or chopper)

Ingredients:
1 cup of medjool dates (do not pack and don’t forget to take the pit out!)
1 ½ cup of walnuts (or any nut that you choose to vary the recipe)
1 cup of unsweetened dried coconut (try to buy organic coconut from a health food store **if possible**)
Pinch of sea salt
A couple of splashes of almond extract (or vanilla, orange, etc. I used almond but with this recipe you can use ANY flavor that you choose, have fun with it! :-)

About 1-2 tablespoons of agave nectar or pure maple syrup

Directions:

Chop dates and walnuts separately in a chopper or food processor. If you do not own a food processor, one option is to chop them by hand using a cutting board and a sharp chef’s knife. Please note that this will take much longer and you will not have the same consistency with the dates, but it works just fine!

Pour dates and nuts into a bowl and add the dried coconut, sea salt, almond extract, and one tablespoon of the agave nectar. Combine all ingredients. If it still appears to be a little dry, add the remaining agave nectar. Tightly pack and form the mixture into small cookies about 1-2 inches. You should add enough agave nectar so that the cookies stick together when you form them. Enjoy this very sweet dessert
